I recently saw EEEBuntu running on a friends EEEPC, and I was impressed, it looked a bit like Ubuntu but looked to run a bit quicker.It also has a Apple style dock which provides quick access to your applications.
Although EEEBuntu is designed to run on the EEEPC after a bit of research I found that it can run on the Acer Aspire One, so I thought I would give it ago and report back here how it goes.
